Biscuiți Șprițați (pronounced bee-s-choo-eats sh-preet-z-atz), also referred to as omidă (pronounced oh-mee-dah), which stands for caterpillar because of its shape, are buttery cookies that are just perfect for your holiday festivities, and can be decorated to your liking, like with a snowy dusting of powdered sugar, or dipped in fudgy chocolate!
Traditionally these cookies rely on a meat grinder and special attachment to form their funky shape (similar to the churro attachment that can be purchased here), however, these can also be cut by hand. The shape won’t affect how these taste (which is delicious, by the way).

- 1 cup lard can sub butter, but lard is preferred
- 2 eggs
- 4 ¾ cups all-purpose flour
- 1 ¾ cups powdered sugar
- 1 t vanilla extract
- 1 t baking power
- 1 pinch of salt

Instructions
- Before beginning, let the lard come to room temperature.
- Pre-heat oven to 350° F.
- Kneed lard, eggs, flour, powdered sugar, vanilla extract, baking powder, and salt together in a bowl.
- The dough should be a bit crumbly, but should still come together to form a ball, similar to a modeling putty.
- If using the meat grinder and attachment: Send the dough through the grinder, cutting the strips into your preferred length, ~2 to 5 inches.
If shaping by hand: Divide dough into four pieces and roll each piece into a rope about ½" thick. Cut the cookies to your preferred length, ~2 to 5 inches. If you want to mimic the texture, run a fork across the top of the cookies. This texture helps the sugar stick to the cookie. - Line a baking sheet with parchment paper and evenly space the cookies for baking, leaving about an inch between each cookie.
- Bake for 10 to 15 minutes, until the cookies develop a light golden color.
